Easy Meals | Crockpot BBQ Pulled Chicken




I made this video a couple months ago on my phone, sorry for the poor quality. Anyway, you get the idea. 
I will be bringing you quick and easy meals you can do in less than an hour. 

Here's what you need for this recipe
  • Crockpot
  • Pack of Chicken {organic, or no antibitiocs added or whatever you can afford}
  • Bottle of BBQ Sauce
  • Coleslaw
  • Hamburger Buns
And whola you just let the chicken cook in crockpot for about 8 hours on slow or 4 hours on fast, add the bbq sauce at the beginning and whola your done. Easy Peasey!

Christmas Treats using candy canes

With Christmas right around the corner, and cookie swaps/exchanges to be had. I wanted to share a few of my easiest treats I've found and have used the last couple of years. We give these out to family, friends and neighbors. It's our tradition to bake our little hearts out and package them all up , gt them pretty and give them out.

This year I wanted it to be really easy, so I made up a G-E-T solution. So I had 3 things in mind when picking out the Christmas Treats...
1. They have to be Good {like oh my gosh good, I've I wouldn't eat them why would I give it to someone else}
2. They have to be Easy to make. Try to use the oven as less as possible.
3. They have to have less than Three Ingredients

So with that this is what I came up with:

This first one is my absolute favorite and it is sooo divine!!!

Peppermint Oreo Bon Bons aka..Chocolate Truffles

Here's my version of it..

Ingredients:
1 (8 oz.) package cream cheese, softened 
I package of Mint Oreo Bon Bon {I use the double stuff...he..he. I love the frosting}
1 Package white or whatever color  Chocolate Candy Coating or Almond Bark 

Equipment:
1 Food Processor
1 mini ice cream scooper

  • Line 2 cookie sheets with waxed paper or parchment paper.
  • Put Oreo's {including the frosting} in a food processor, you can break them up so it's easier and faster, and run until the consistency is like grounded coffee...it kind of looks like it too. 
  • Add the cream cheese a little at a time to the oreo mix and mix until its all mixed together. It will be somewhat sticky, it's ok
  • Using a cookie scoop or large spoon, form "balls" from the mixture and place them on the cookie sheets, 1 inch apart.
  • Refrigerate bon-bons until hardened in texture, about 30 mins{in freezer} or 1 hour {in refrigerator}
  • During this time melt your chocolate,  in microwave or over broiler or stove top {microwave is easiest}, the consistency should be smooth when it's ready. 
  • Using a large spoon or fondue fork dip the oreo "balls" in the chocolate, evenly coating and placing on cookie sheet again. It doesn't have to be perfect...no worries. They are going to be eaten anyway. 
  • Allow all oreo bon-bons to set. I usually put mine in my freezer and let set in their for about 20-30mins. Garnish as desired. (I have done all sorts of different versions: Drizzled with tinted white candy coating with different color combinations; sprinkled with crushed candy canes for Christmas, there are so many possibilites with them.
  • Once set enjoy these rich little delights. They are simply divine...I think I'm re-naming them to Oreo's Divine {LOL}



Peppermint Bark Cookie Tartlets


I found these a couple years ago on nestle's website and have used ever since. They are yummy, click on the picture below {finished product to go to their site}. They have some other yummy, easy recipes. 

Ingredients:
1 pkg of already made cookie dough {can get in refrigerated section at store}
2-3 crushed candy canes
1 pkg of white chocolate chips

Supplies:
1 mini muffin pan
mallot or rolling pin to crush the candy canes
plastic sandwich baggie


Ingredients

Directions

PREHEAT oven to 325ยบ F.

COMBINE cookie dough and flour in large mixing bowl. Divide dough into 24, 1 1/4-inch balls. Press dough into mini-muffin cups.*

BAKE for 10 minutes or until light golden brown around edges and puffy.

REMOVE tartlets from oven and immediately fill with morsels and crushed candy canes. Cool for 10 minutes in muffin cups. Carefully remove to wire rack, do not invert; cool completely.

*If making tartlets in batches, keep extra dough in the refrigerator.

It's a Pumpkin Party......All Things Pumpkin!!




I don't know about you but I love pumpkin, pumkin spice, pumpkin rolls, pumpkin pies, pumpkin latte's. It's just so fit for the season. Here is a recipe from a sweet sis http://comfyinthekitchen.com/. But go to her website to check out the full recipe with step by step directions and pictures. This looks yummy and is low-fat. Yay for my tummy and my hips will be happy too! LOL....I'm training for a race this weekend, or season and I want to be a good steward over my body {which is very difficult, but with God all things are possible} so low fat is good. And I love sweets, but they are not good for me so I trying to be diligent to not give in. So this is right up my ally. I will try to post a few healthy sweet treats for the Fall/ Harvest Season!!
Low Fat Pumpkin Trifle..Yummmmm!

Pumpkin Trifle (18 servings)

Cake:
1 box Spice Cake
1 ¼ cups water
1 egg

*Mix all ingredients and bake in an 8×8 pan at 350 for 35 mins or until set. Cool on stove or wire rack.

Pudding Filling:
4 cups skim milk
4 packages (1 oz each) instant butterscotch pudding mix
1 can (15 oz) pumpkin mix- you can use EASY, but eliminate the spices below
1 ½ tsp Pumpkin Spice (or 1 tsp cinnamon, ¼ tsp of each: ginger, nutmeg and allspice)
* In a large bowl mix milk with pudding mix. Let sit until it thickens (appx 5 mins). Add pumpkin and spices and mix well.
1 carton (12 oz) light whipped topping

Layering Process:
In a Trifle bowl (or any large bowl) layer:

1. A fourth of the cake crumbled with your hands
2. Half of the pumpkin mixture
3. A fourth of the cake crumbled
4. Half the whipped cream
5. Repeat the layers
6. Garnish with whipped topping and cake crumbs
7. Refrigerate until ready to serve.


These little mini pumpkin pies are so delicious and are low in calories IF you follow the recipes exactly as instructed. These little things are only 36 calories each. Can you say, Oh yeah!!

Mini Pumpkin Pies
Ingredients Needed:
1/2 cup Pumpkin
 1/2 cup Egg Whites 
1 tsp Pumpkin Spice
1 Cup Sweetener of Choice
1 Cup Cottage Cheese
12 Won Ton Wrappers

Spray pan with cooking spray and preheat oven to 350 and bake for 12-15 minutes.




2 Ingredient Mini Pumkin Muffins

Ingredients
•1 (18.25 ounce) package spice cake mix
•1 (15 ounce) can pumpkin

Directions
1.Preheat the oven to 350 degrees F (175 degrees C). Generously grease mini cupcake baking tray.
2.In a large bowl, mix together the spice cake mix and canned pumpkin until well blended. Spoon about 1 tablespoon of batter into each greased mini-muffin cup.
3.Bake for 12 minutes in the preheated oven, or until a tooth pick inserted into the center comes out clean or they spring back. Cool and serve, or in Tupperware container

Football Game Recipe {Feasting in Fellowship!}

 

I am participating in the Feasting in Fellowship Fridays {shh..today is sat-LOL}. For the game tomorrow I am bringing my oreo bon bons and a cream cheese salsa dip. You can go here for my oreo bon bon recipe {super easy and super yummy!!}. Below is the recipe for the cream cheese salsa dip. Oh my, the first time I had this I was at a house warming party and I could not get enough of this stuff. I asked for the recipe and realized how easy and yummy this was. I immediately added that right away to my "go to easy recipe list".

Cream Cheese Salsa Recipe:

Ingredients:
  • 1 jar/can of salsa chunky style or homemade
  • 1 pkg cream cheese {softened}
  • 1 cup of corn, you can add more if you like
Mix all together in a medium bowl and mix well. Refrigerate until your gathering starts and whola! Grab a chip to taste test before you serve, just in case you need to add something. And that's it; I love it and it's so yummy. You can also, if your crunched on time, put the cream cheese on a plate or big bowl and drop salsa on top. That is good too. Instead of cream cheese you can change it up a bit and add velvetta cheese {warmed on the stove or micro} to the salsa and you got yourself 'Chile con Queso' {salsa and cheese dip}. You can do just about anything with salsa and cheese, it's so versatile. Sorry no pics for this one.

Feasting in Fellowship Fridays!

 

Oreo Mint Bon Bons!!!

I have to say these little delights are so yummy and easy. I was introduced to these about a year ago by a girl friend of mine and ever since I've been hooked {wink, wink}.


Ingredients:
1 (8 oz.) package cream cheese, softened
I package of Mint Oreo Bon Bon {I use the double stuff...he..he. I love the frosting}
1 Package Dark Chocolate Candy Coating or Almond Bark

  • I add oreos {broken} and cream cheese to a food processor and mix until its all mixed together. 
  • Line 2 cookie sheets with waxed paper.
  • Using a cookie scoop or large spoon, form "balls" of the mixture and place them on the cookie sheets, 1 inch apart.
  • Refrigerate bon-bons until hardened in texture, about 30 mins-1 hour.
  • Melt Candy Coating, either over broiler on stovetop or in microwave, microwave is easiest, stirring after each 30 seconds of microwaving.--until smooth.
  • Using a large spoon dip the oreo "balls" in the chocolate, evenly coating and placing on cookie sheet again.
  • Allow all oreo bon-bons to set. I usually put mine in my freezer and let set in their for about 20-30mins. Garnish as desired. Tasty Tuesday...oh and some Tips!!

Ok, I love receiving great tips and I love to share them. I have been led to share this one and some yummy recipes, it keeps coming back to my mind, so here it is. Hope it helps you in your baking, as it did me.

Tuesday Tip: How to keep your Brown sugar from hardening? Oh, how much money I would spend on brown sugar, throwing it away because it got rock hard. I never had a solution, until one day I came across this very question...and they had an answer? It's an easy one for sure. I keep my brown sugar in a canister, once I bring it home it goes right into this canister along with a piece of bread. The bread is the secret, it some how keeps it moist. My husband told me why, but I have forgotten...I think because it soaks up the moisture??? Anyway, it works and it works great and I'm a happy cooker! I usually use the ends of the breads, no one eats them anyway and it doesn't go to waste {I used to throw the ends out anyway}. So there you go, wasn't that an easy one? No more wasting brown sugar or the ends of breads anymore. Praise the Lord for tips and saving money!!




Tasty Tuesday: As with the tips when I find good treats I love to share them. So here are a few that I found today. These are great ones if you are going to bake with your family {I highly recommend this}, a cookie exchange, CHRISTmas party or if you are starting a family tradition.  

Homemade Gingerbread House:

Isn't this soo cute, and super frugal. They are made out of graham crackers, homemade frosting and some candy. Below is the recipe for the homemade royal icing frosting. This is one I will be doing this year, I forgot to last year. When I saw this I was reminded of my sweet friend who does with her family they do this every year. How fun, you could hold an Annual Gingerbread House Contest with your family too! 

Royal Icing

2 large egg whites
2 teaspoons fresh lemon juice
3 cups (330 grams) confectioners (powdered or icing) sugar, sifted

In the bowl of your electric mixer (or with a hand mixer), beat the egg whites with the lemon juice. Add the sifted powdered sugar and beat on low speed until combined and smooth. The icing needs to be used immediately or transferred to an airtight container as royal icing hardens when exposed to air. Cover with plastic wrap when not in use.

You could use food coloring to turn the frosting different colors and then just put a spoon full into a little baggie and cut off a little snip at the corner to squeeze it out.

Homemade Soft Sugar Cookies and Homemade Frosting:


This is one I will be doing tonight. Don't they look yummy!! This is a great one to take to the neighbors or family and friends. I love the sprinkles they even have little J's in them, they are supposed to be candy canes, but to me they are for JESUS {squeal, squeal}. I got this recipe from Woman Living Well, Janelle from Comfy in the Kitchen posts these awesome recipes and takes you step by step and they are simple.  Awesome encouraging websites, go check'em out. Below is the recipe, but go to Woman Living Well to read the story about how she got started making these, it's such a sweet story.

Soft Sugar Cookies:


2 c sugar
1 cup butter (softened)
2 eggs
5 cups flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 cup buttermilk (or 1 cup milk mixed with 1 Tbsp lemon juice OR white vinegar)

Preheat oven to 350

Cream sugar, butter and eggs together. Add flour and dry ingredients together, pour into creamed mixture. Add milk and vanilla and beat well. Place dough in refrigerator for 1 hour. Roll dough into balls (heaping tablespoon size) and place 6 to a sheet to allow spreading. Bake for 15 mins. When done, keep on baking sheet for 1 min so they are easier to take off. Transfer to cooking rack until ready to frost and decorate!

Frosting:
6 cups powdered sugar
6 Tbsp butter (softened)
3 Tbsp (appx) of milk or until desired consistency
1 tsp vanilla

Beat all ingredients well until smooth and creamy.

Rolo Pretzel Sandwiches and Turtles:

Ok, I absolutely love this one, I love Rolos and it's paired with pretzel. It's a sweet savory yummy snack. This is great for a Christmas party. I also found this at Comfy in the Kitchen with Janelle. If you need help like me in the cooking department go check out her website. She is a sister in the Lord, and has great tutorials on some yummy food. I'm a visual person, and it works for me she has lots of pics.

Rolo Pretzel Sandwiches/Turtles

1 Bag Rolos
1 Bag square pretzels
and/or
1 Bag pecan halves
(sprinkles)

Well, it's back to school we go!!

It's been a while since I last posted anything on my blog, ....whew summer went by soo fast. I've been busy with different projects and it's been such a blessing. Hope to share soon, if the Lord should lead. Today was the first day of our school year and we were super excited. My little one especially was really excited, it was her first day in kindergarden {at home, I am homeschooling again this year}. And my baby girl {my oldeset} started 7th grade today, it was special!!

I will be posting pics of our first week of school soon. I'm excited!! I pray your first day was super awesome and your kids were blessed. I made my family a special breakfast, like something out of a Denny's menu {LOL} and tonight we are having a special dinner. Roasted Chicken, homemade mashed papa's, homemade gravy and a side of veggies. Yummo! I can't wait to hear your about your first day back to school blessings.

Here is the recipe for Roasted Chicken it's super easy.

Ingredients:
Whole Chicken {can usually get these for about $.67 - $.97 lb when they are on sale, only time I buy them}
Olive oil
seasoned salt
lemon pepper
Roasting pan {you can use a 13x9 or any deep dish pan that will be big enough for your chicken}
A Roasting Tray {I didn't have it so I used celery sticks like 3-4 depending on pan and size of chicken}
Preheat oven to 375 degrees. So take your defrosted chicken out of package, take out the insides and give it a good wipe down with a wet paper towel {recommended way to do it}. Once that is done lay some celery sticks or your roasting tray in your pan. Put chicken on top of the tray or celery, and massage some oil on chicken, I'd say about 2-3tbspns if you want to get technical. I just eyeball it, just lather that baby up. Then get your seasoned salt and massage to chicken, again I eyeball it, but if you want about 2tbspns, just enough to make him look like she's got a tan. Then apply some lemon pepper and do the same. And viola your done, put her in the oven for about 1 and 1/2 hours. And you got yourself a home smelling good, makes the kids want to come eat at the table. I also am making some homemade mashed potatoes. You just peel your papas {potatoes} and cut them to about 2 inch, just in quaters and quaters again. Put them in cold water in a deep pan {something you would cook your spaghetti in} and some salt to taste {optional} bring to a boil and lower heat to medium-med/high heat and cook for about 15-20 minutes, drain and add some butter {2-4 tbspns}, some milk about 1/4 cup or how ever much you feel you need. Depends on how creamy you want them and then add salt and pepper to taste. Make some veggies, just steam some or cook them in a frying pan with a little bit of butter or boil them. And once the chicken is done take the chicken out of the pan, but leave the juices and celery, with that roasting pan put on your stove to cook the gravy in. Yes the whole pan, it should take up about 2 burners. Once you got that thing hot add 1 1/2 cup of chicken broth and stir. In another little bowl stir 1/4 cup of chx {chicken stock} and 1/4 cup of flour and stir until there are no lumps. Then add that to your hot pan, stirring constantly until it's boiling and should be a thick consistancy. If it's not thick add flour about 1 tsp at a time. And if's too thick add more chicken broth.  And viola your done, a meal that seems like it's alot of work but it's super easy. Alright ya'll have a blessed night! I will let you know how it turns out. This is the 2nd time I've made it, but it's been awhile. I got this recipe off of a show, Lordwilling I pray it comes out edible.

Fun Recipes!!

Well I love to search for great recipes and I happened to find this one. If you have a pooch (dog) this would be great. I love making things from scratch so here is an easy recipe for your doggie. I have not made this yet, but I couldn't resist to not share with you.

Easy Doggie Biscuits
2 1/2 cups whole wheat flour
1/2 cup dry milk powder
1/2 teaspoon salt
1/2 teaspoon garlic powder (optional)
1 teaspoon brown sugar
6 tablespoons butter, oil, meat fat, or shortening
1 egg, beaten
1/2 cup ice water

Mix flour, milk powder, salt, garlic powder and brown sugar. Cut in shortening until mix resembles cornmeal. Mix in egg. Add enough water so that mix forms a ball. Pat dough 1/2 inch thick with fingers on lightly oiled cookie sheet. Cut with dog bone cutter, remove scraps. Pat out scraps and proceed as before. Bake 25 to 30 minutes at 350 degrees. Makes about 10 biscuits.

Homemade Modeling Clay

So I found this really cool recipe for modeling clay. It was in Sunday's newspaper in the Living section under Arts/crafts. And so I wanted to see if it worked. I will give the recipe below.

So that was much fun!!!! Thank you Lord for the blessed afternoon we had.
Here's the Modeling Clay recipe

1 cup flour (I used wheat flour, that's all I had, I imagine the white would look better)
1 cup warm water
2 teaspoons cream of tarter
1 teaspoons oil ( I used olive oil, that's all I had)
1/4 cup salt
Food coloring

Mix the fist 5 ingredients together, then add the food coloring. I sectioned the dough in as many parts for each color. So I had four sections. Cook each one seperately. Stir it all over medium heat until it's smooth, you do it like your pouring pancakes. Then remove the dough from the pan and knead it until ti's smooth. When it cools, place the dough in a plastic bag or airtight container where it should keep for some time.

Ok, well I really didn't stick exactly to the "T" on this recipe. I did not knead the dough after you get out of the pan. I waited, I figured it would be hot. And it kind of looks like a pancake when you cook it. The dough will be very thick and almost like a thick pancake consistency. I also cut the dough in four sections before I cooked it to be able to have four different colors. We waited a few minutes and kneaded and then played with it right away. It still worked the same and we had a bunch of fun. So pick an afternoon and let your kids get involved in the baking process and you will have so much fun as we did.

Dear Lord Jesus, I know I am a sinner. I believe you died for my sins. Right now, I turn from my sins and open the door of my heart and life. I confess you as my personal Lord and Savior.
