It's a Pumpkin Party......All Things Pumpkin!!

I don't know about you but I love pumpkin, pumkin spice, pumpkin rolls, pumpkin pies, pumpkin latte's. It's just so fit for the season. Yay for my tummy and my hips will be happy too! LOL....I'm training for a race this weekend, or season and I want to be a good steward over my body {which is very difficult, but with God all things are possible} so low fat is good. And I love sweets, but they are not good for me so I trying to be diligent to not give in. So this is right up my ally. I will try to post a few healthy sweet treats for the Fall/ Harvest Season!!

Low Fat Pumpkin Trifle..Yummmmm!

Pumpkin Trifle (18 servings)

Cake:

1 box Spice Cake

1 ¼ cups water

1 egg

*Mix all ingredients and bake in an 8×8 pan at 350 for 35 mins or until set. Cool on stove or wire rack.

Pudding Filling:

4 cups skim milk

4 packages (1 oz each) instant butterscotch pudding mix

1 can (15 oz) pumpkin mix- you can use EASY, but eliminate the spices below

1 ½ tsp Pumpkin Spice (or 1 tsp cinnamon, ¼ tsp of each: ginger, nutmeg and allspice)

* In a large bowl mix milk with pudding mix. Let sit until it thickens (appx 5 mins). Add pumpkin and spices and mix well.

1 carton (12 oz) light whipped topping

Layering Process:

In a Trifle bowl (or any large bowl) layer:

1. A fourth of the cake crumbled with your hands

2. Half of the pumpkin mixture

3. A fourth of the cake crumbled

4. Half the whipped cream

5. Repeat the layers

6. Garnish with whipped topping and cake crumbs

7. Refrigerate until ready to serve.

These little mini pumpkin pies are so delicious and are low in calories IF you follow the recipes exactly as instructed. These little things are only 36 calories each. Can you say, Oh yeah!!

Mini Pumpkin Pies

Ingredients Needed:

1/2 cup Pumpkin

 1/2 cup Egg Whites 

1 tsp Pumpkin Spice

1 Cup Sweetener of Choice

1 Cup Cottage Cheese

12 Won Ton Wrappers

Spray pan with cooking spray and preheat oven to 350 and bake for 12-15 minutes.

2 Ingredient Mini Pumkin Muffins

Ingredients
•1 (18.25 ounce) package spice cake mix
•1 (15 ounce) can pumpkin

Directions
1.Preheat the oven to 350 degrees F (175 degrees C). Generously grease mini cupcake baking tray.
2.In a large bowl, mix together the spice cake mix and canned pumpkin until well blended. Spoon about 1 tablespoon of batter into each greased mini-muffin cup.
3.Bake for 12 minutes in the preheated oven, or until a tooth pick inserted into the center comes out clean or they spring back. Cool and serve, or in Tupperware container
