Tonight I made a quick and easy meal for Monday and I wanted to share it with you. I hope to bring one every week. So tonight we had Pad Tai dinner. Now it's not your authentic Pad Tai dinner, but it was good and the kids loved it. So here is what you need:
- 1 package of Tai Dinner, pad tai noodles. I hope that the picture will load so you can see it. If not it comes in a red box and is in your asian isle at your local wal=mart. It's about $3.00 a box.
- 1 package of Stir fry veggies, can find those in your freezer section at your local grocery store, I bought mine at Fresh and easy.
- 1 package of mini egg rolls (not shown). Again I bought those at Fresh and easy, but you can really get these anywhere.
- 3 cups of cooked rice.
So basically you will want to start your rice going first, I have a rice cooker (a very small one) and cook that, that usually takes the longest. Then get your egg rolls cooking in the oven, and start to boil your water for the noodles. Once all those things are done, you can start to cook your stir fry, oh I almost forgot you can also start to cook your chicken or meat to add to the Stir Fry. We bbq'd the chicken took less than 15 mins. So once you got all those things cooked then you start cooking your stir fry that only takes about 5-7 mins. Then when that's done you combine the noodles with that the chicken and mix with the pad tai sauce that comes with it. And viola you got yourself some Pad Tai Stir Fry. Put in on a plate with some rice and mini eggrolls and you got yourself a meal. Pretty low cost, almost low calorie and yummy for the whole family!!

That's a great meal Sis! Doug and I are eating low carb to get in shape and get him ready for his physical with the new company in a few months. His goal is to lose 100 lbs. Eekk! My honey will be all skin and bones. But I will post a meal of my own. It is low carb and cost less than $4.00. I was so proud of myself last night!
