I will be posting pics of our first week of school soon. I'm excited!! I pray your first day was super awesome and your kids were blessed. I made my family a special breakfast, like something out of a Denny's menu {LOL} and tonight we are having a special dinner. Roasted Chicken, homemade mashed papa's, homemade gravy and a side of veggies. Yummo! I can't wait to hear your about your first day back to school blessings.
Here is the recipe for Roasted Chicken it's super easy.
Ingredients:
Whole Chicken {can usually get these for about $.67 - $.97 lb when they are on sale, only time I buy them}
Olive oil
seasoned salt
lemon pepper
Roasting pan {you can use a 13x9 or any deep dish pan that will be big enough for your chicken}
A Roasting Tray {I didn't have it so I used celery sticks like 3-4 depending on pan and size of chicken}
Preheat oven to 375 degrees. So take your defrosted chicken out of package, take out the insides and give it a good wipe down with a wet paper towel {recommended way to do it}. Once that is done lay some celery sticks or your roasting tray in your pan. Put chicken on top of the tray or celery, and massage some oil on chicken, I'd say about 2-3tbspns if you want to get technical. I just eyeball it, just lather that baby up. Then get your seasoned salt and massage to chicken, again I eyeball it, but if you want about 2tbspns, just enough to make him look like she's got a tan. Then apply some lemon pepper and do the same. And viola your done, put her in the oven for about 1 and 1/2 hours. And you got yourself a home smelling good, makes the kids want to come eat at the table. I also am making some homemade mashed potatoes. You just peel your papas {potatoes} and cut them to about 2 inch, just in quaters and quaters again. Put them in cold water in a deep pan {something you would cook your spaghetti in} and some salt to taste {optional} bring to a boil and lower heat to medium-med/high heat and cook for about 15-20 minutes, drain and add some butter {2-4 tbspns}, some milk about 1/4 cup or how ever much you feel you need. Depends on how creamy you want them and then add salt and pepper to taste. Make some veggies, just steam some or cook them in a frying pan with a little bit of butter or boil them. And once the chicken is done take the chicken out of the pan, but leave the juices and celery, with that roasting pan put on your stove to cook the gravy in. Yes the whole pan, it should take up about 2 burners. Once you got that thing hot add 1 1/2 cup of chicken broth and stir. In another little bowl stir 1/4 cup of chx {chicken stock} and 1/4 cup of flour and stir until there are no lumps. Then add that to your hot pan, stirring constantly until it's boiling and should be a thick consistancy. If it's not thick add flour about 1 tsp at a time. And if's too thick add more chicken broth. And viola your done, a meal that seems like it's alot of work but it's super easy. Alright ya'll have a blessed night! I will let you know how it turns out. This is the 2nd time I've made it, but it's been awhile. I got this recipe off of a show, Lordwilling I pray it comes out edible.
